Mert's Visits WBTV News at Noon!

CHARLOTTE, NC (WBTV) - James Bazzelle, owner of popular Charlotte eatery Mert's Heart and Soul, visited with WBTV anchor Kristen Miranda today at noon.  He did a little demo for us and our television audience, sharing the secrets behind both his cornbread and collard greens recipes.  Enjoy the following recipes.  We did!


Mert's Cornbread
1/2 cup unsalted butter, melted
2/3 cup sugar
2 large eggs, slightly beaten
1 Tbsp mayonnaise
1 cup self-rising cornmeal mix
1-1/2 cups self-rising flour
1 cup buttermilk
1/2 cup water

Local businesses team up to support veterans

From free meals to car washes, our community is really looking out for our men and women of the Armed Forces. Both veterans and active duty military are being treated to free food and services, Nov.11-12.

Most of these require a military ID (V.A. ID will work, too) or some other proof of service. We've listed a few of the offers, below. There is a Facebook page dedicated to these offers. You can find it here.

The Barman’s Fund is a group of bartenders and servers working to raise money for a cause. Each participant chooses one shift each month and designates that night to donate 100% of their tips.

At the end of the month, the group pools the money and goes shopping. They aren’t shopping for themselves though. They go shopping to buy needed items for nonprofits.

The Barman's Fund started with Brian Floyd in New York in April 2011. Holly Williams carried the idea from New York to New Orleans. That’s where WBTV Sports Reporter Sammi Jo Francis learned about the fund. She was visiting family in New Orleans and wanted to bring the idea back to Charlotte.

The Charlotte chapter of The Barman's Fund officially kicked off in July, with Sammi Jo chairing the group. Four bartenders and one server from three bars joined on, and in their first month, the group raised almost $3,000.

Field to Fork Program makes a name for itself, expands

Charlotte’s Mayor and County Commissioner Jennifer Roberts will attend the Tuesday Morning Breakfast Forum at the West Charlotte Recreation Center at 8:30 a.m. Tuesday.

Then at 3:30 p.m. the Mayor will stop by Fuel Pizza in the Hearst Tower at the corner of 6th and College. He will visit with students from Winterfield Elementary who are participating in Fuel Pizza’s “Field to Fork” program.  The program is a six-month partnership between Fuel, Charlotte-Mecklenburg Schools and the County Health Department. It provides seed money for local schools. The schools then take the money and start their own pizza gardens with tomatoes, spinach, basil and other items.

The partnership is designed to help fight obesity. It was inspired by Michelle Obama’s White House garden.

You can make Fran's nachos!

CHARLOTTE, NC (WBTV) - Fran Scibelli, of Fran's Filling Station fame, visited WBTV today at noon.  Loaded down with all kinds of goodies from the farmer's market, she showed us how to make a healthier version of nachos.  The secret ingredient is soy chorizo, a vegetarian product offering that classic chorizo taste.  (You can find soy chorizo at Trader Joe's.)  Unless someone told you, you'd never know these nachos were meatless.

Even though Fran fried her own tortilla chips, you can use your favorite brand right out of the bag and get great results.  Generously layer on sharp Cheddar, then top with cooked soy chorizo.  Bake for two minutes at 425 degrees, or until the cheese melts.  Make sure you use an oven-safe serving dish. 

Once out of the oven, top with black beans, corn and guacamole.  Garnish with your choice of sliced black olives, pico, peppers, jalapenos, cilantro and sour cream.

National Pancake Day is February 28th!

CHARLOTTE, NC (WBTV) - The Children's Miracle Network Hospitals and IHOP Restaurants will celebrate National Pancake Day on Tuesday, February 28th.  In return for a donation to Levine Children's Hospital, guests at participating IHOP Restaurants will receive a free, short stack of its famous buttermilk pancakes.  IHOP seeks to raise $2.7 million this year.
